From the flicker of the wood-fired oven to the aroma of San Marzano tomatoes and buffalo mozzarella, every detail is meticulously curated to transport diners to the cobblestone alleys of Italy.

What is Neapolitan style pizza?

The traditional "pizza napoletana" boasts a thin crust and a raised rim known as the "cornicione," which is airy and delicate. The pizza should have a soft texture, allowing it to be folded like a booklet, a shape affectionately termed "a portafoglio," while still retaining a hint of fragrance. Its flavor profile emerges from the harmonious interplay of bread's taste, tomato's tanginess, and the gentle sweetness of fresh mozzarella.

Neapolitan pizza undergoes cooking in specialized wood or gas ovens at temperatures around 430/485°C for 90/120 seconds. To achieve a delightful and airy cornicione, the skilled pizzaiolo directs air from the dough's base into the outer rim, the cornicione. The intense heat of the oven then takes over, puffing up the cornicione to create a crisp exterior while maintaining a soft and fluffy interior.
